Let’s forget about this drink’s name for a moment. It doesn’t remotely resemble a classic Martini, and we won’t even begin to guess how it acquired the first part of its title. But this crowd-pleasing combination of vanilla and passion fruit accompanied by a shot of sparkling wine, created by bartender Douglas Ankrah at London’s Townhouse bar in the early 2000s and since adopted by bars the world over, certainly is a star.
Ingredients
- 45 ml vanilla-flavoured vodka
- 15 ml passion fruit liqueur (such as Passoã or De Kuyper)
- 15 ml passion fruit puree
- 15 ml lime juice, freshly squeezed
- 15 ml vanilla simple syrup
- 60 ml sparkling wine, chilled
- Garnish: 1/2 passion fruit
Steps
- Add all ingredients except sparkling wine into a shaker with ice and shake vigorously until well-chilled
- Strain into a chilled coupe glass.
- Garnish with a passion fruit half.
- Serve with a sparkling wine sidecar (on the side).
