This gingery cocktail was created by Audrey Saunders for her NYC bar Pegu Club as a gateway gin drink for vodka lovers. Not only did it succeed, it inspired many variations around the world.

Homemade ginger beer won’t be fizzy and thus can be shaken. If you’re using carbonated ginger beer, pour that ingredient directly into the glass to top up the drink.

Ingredients

  • 30 ml simple syrup
  • 22.5 ml fresh lime juice
  • 1 mint sprig
  • 60 ml London dry gin
  • 30 ml Ginger Beer
  • Garnish: 1 mint sprig

Steps

  1. In a mixing tin, muddle the simple syrup, lime juice and 1 mint sprig.
  2. Add the gin, ginger beer and ice, and shake well.
  3. Strain into a highball glass over fresh ice.
  4. Garnish with 1 mint sprig, and serve with a straw.
